the best motivation is the support of the open documents concept technology may change, will your data be able to move with that change, or get left behind (do you remember the tape archives ?) the use of file formats or data storage methods where the structure is open and well documented is important: these include files formats like  ASCII text, HTML/XHTML, XML, RTF, JPEG, PNG, ... if we are open content, does the OS matter? YES for the server, less for clients, anyway often this is an issue of policy and procedure rather than technology
